4 ways to enjoy pumpkin seeds!

Nothing says Happy Halloween like an amazingly carved pumpkin sitting on your stoop. But what should you do with the pumpkin guts? Eat them…..or at least the seeds. Pumpkin seeds are a healthy, low calorie snack perfect for the fall season. Try one of these delicious pumpkin seed recipes perfect for the whole family or make all 4 and have a tasting party!

  1. Cinnamon Sugar Pumpkin Seeds
    Prep Time: 20 mins
    Cook Time: 25 mins
    Servings: 8

Ingredients
2 cups raw pumpkin seeds
2 tbsp butter, melted
½ cup white sugar
1 tbsp ground cinnamon

Instructions

  1. Preheat oven to 350°F, and line a baking sheet with parchment paper.
  2. Remove all the pulp and strings from the pumpkin seeds, then wash and thoroughly dry the seeds.
  3. In a small bowl, toss together sugar and cinnamon until well combined. Set aside. Place the melted butter in a bowl, toss the seeds in the butter to coat, and pour them onto the prepared baking sheet.
  4. Sprinkle about 2 tablespoons of cinnamon-sugar mixture over the seeds. Toss gently to mix the coating, and spread seeds into a single layer. Bake the seeds for 5 minutes. Repeat two more times.
  5. Finally sprinkle the seeds with the remaining 2 tablespoons of sugar, mix, and bake for 10 minutes.
  6. Let the seeds cool on the baking sheet before eating.

 

  1. Vanilla Pumpkin Seed Clusters
    Prep Time: 5 mins
    Cook Time: 15 mins
    Servings: 15

Ingredients
1/2 cup pumpkin seeds
1 tsp vanilla extract
2 tsp maple syrup
2 tsp coconut sugar
Water boiled

Instructions

  1. Preheat oven to 300°F.
  2. Remove all the pulp and strings from the pumpkin seeds, then wash and thoroughly dry the seeds.
  3. In a medium bowl, combine the maple syrup, coconut sugar and vanilla. Stir together to create a thick paste then add a small drop of boiled water to thin it out and create a runny syrup.
  4. Pour in the pumpkin seeds and stir them around in the mixture to evenly coat them.
  5. Dollop a generous teaspoon full of the pumpkin seeds onto a baking sheet, repeat until it’s all used up and cook for 15-20 minutes until most of the seeds have browned (but don’t let them burn!)
  6. Take out of the oven and leave to cool for a few minutes. Once they’ve cooled a little (but are still warm) you can press the clusters together to make sure they don’t fall apart. They will dry quickly.
  7. Once they’re cooled and dried, they’re ready to eat!

 

  1. Spicy BBQ Spiced Pumpkin Seeds
    Prep Time: 10 mins
    Cook Time: 40 mins
    Servings: 1/2 cup

Ingredients
1-1/2 cup unshelled pumpkin seeds
1 1/4 tsp onion powder
1 1/4 tsp garlic powder
1/2 tsp smoked paprika
1/2 tsp kosher salt
1/4 tsp cayenne pepper
1/4 tsp ground mustard
1/4 tsp light brown sugar
4 to 5 squirts olive oil spray

Instructions

  1. Preheat oven to 300°F.
  2. Remove all the pulp and strings from the pumpkin seeds, then wash and thoroughly dry the seeds.
  3. Spread the seeds on a baking sheet and roast for about 10 minutes or until seeds are dry, tossing halfway through.
  4. In another small bowl, combine the onion powder, garlic powder, mustard, smoked paprika, cayenne, salt and brown sugar.
  5. Place the seeds in a medium bowl and lightly spray with oil.
  6. Add 3/4 of the spice mixture and toss to evenly coat.
  7. Evenly spread the seeds on a sheet pan covered with parchment and roast for 20 to 30 minutes or until brown and crunchy, tossing half way through.
  8. Immediately spray more olive oil over the seeds and toss with the remaining spice mixture.

 

  1. Classic Roasted Pumpkin Seeds
    Prep Time: 5 mins
    Cook Time: 25 mins
    Servings: 6

Ingredients
2 cups pumpkin seeds
2 tbsp olive oil
Salt to taste
Pepper – optional to taste

Instructions

  1. Remove all the pulp and strings from the pumpkin seeds, and then wash the seeds with water.
  2. Place them in a bowl covered with water and 1 Tsp of salt overnight
  3. The next day, drain your seeds and dry them up with a paper towel
  4. Preheat oven to 375°F.
  5. Place them in a bowl and add the olive oil, salt and pepper. Mix
  6. Place seeds in a sheet pan in one layer
  7. Bake for 25-30 minutes or until browned. Mix them every 10 minutes
