The More the Merrier

You can never have too much food, especially at a pool party! This is the perfect occasion to make a bunch of easy dishes and look like the ultimate party master. Start by choosing food and decor that fits your style. Before we get to the food, think about the presentation. Do you like color? Then purchase some colorful water jugs and flowers to place among your food. How about a bit of fun? Instead of a regular table cloth you can use large beach towels instead. There are a lot of easy, inexpensive ways to compliment your culinary efforts.

The great part about a summer pool party is all of the seasonal ingredients you can find. Choose from a large selection of fruit and make a layered fruit salad or fruit kabobs, perfect for kids and adults. Ingredients
12 medium jalapeno chilies
1 (8-oz.) pkg. cream cheese, softened
1 cup finely chopped cooked chicken
2 tablespoons finely chopped fresh cilantro
1 tablespoon fresh lime juice
3/4 teaspoon kosher salt
12 hickory-smoked bacon slices, cut in half
24 wooden picks

 

Instructions
1.Preheat oven to 400°F. Cut each chili in half lengthwise; remove seeds and membranes.
2. Stir together cream cheese, chicken, cilantro, lime juice, and salt. Spoon 1 1/2 to 2 teaspoons chicken mixture into each chili half, spreading to fill cavity. Wrap each half with a bacon piece, and secure with a wooden pick. Place poppers on a lightly greased wire rack in an aluminum foil-lined rimmed baking sheet.
3. Bake in preheated oven until bacon begins to crisp and chilies are softened, about 25 minutes. Increase oven temperature to broil, and broil until bacon is crisp, 2 to 3 minutes. Let stand 5 minutes before serving.
4. Eat….ummm, tasty!
