Mango Chia Pudding

Mangos are one of Springs sweet treasures, add some chia seeds and coconut milk and you have a winning combination. Mango Chia Pudding is a healthy and delicious layered dish which is loaded with anti oxidants, Omega 3, Vitamin A and C. It’s definitely a guilt free indulgence, perfect for breakfast or an afternoon snack by the pool!

200 ml Coconut Milk
1 cup Yogurt
4 tbsp Chia Seed
2 tbsp Honey
1 tsp Vanilla Extract
2-3 cup Ripe Mango Peeled and Cubed

1. Mix coconut milk, yogurt, chia seed, honey and vanilla extract in a bowl.
2. Keep aside for 30 minutes.
3. Mix once again and then refrigerate for 3-4 hours.
4. Add some coconut milk chia seed mixture in a serving glass.
5. Top with chopped mangoes.
6. Repeat the layer.
7. Garnish with mint leaves and coconut flakes.
8. Serve chilled.
9. Eat….ummm, tasty!
